- FRENCH-FRIED ONIONS

- 2 1/2 to 3 lbs. shortening
- 4 to 5 ( about 1 lb.) onions
- 1 cup milk
- 1 teaspoon salt
- 1 cup flour
- 2 tablespoons salt
- 1. Place shortening in saucepan, heat to about 380 degrees F.
- 2. Peel and slice onions (about 1/4-inch thick); separate into rings.
- 3. Add 1 teaspoon salt to milk and soak rings ; 15 to 20 minutes.
- 4. Combine flour with 2 tablespoon salt. Drain ring well and
- coat with salted flour. Shake off excess flour.
- 5. When shortening is heated to correct temper-ature, place rings
- into fry basket. Lower it carefully. Fry about 2 minutes. Drain on paper
- towel, salt and serve.
- Yield: 4 to 6 servings.
